Friday Night Bites

After a long week, dinner tonight had to be simple. Generally, I shop at the beginning of the week and cook as much of the fresh food as possible. In order to make dinner appetizing, and not a pile of leftovers, I have to be creative but keep it really simple.

Whenever I talk to people who are curious about my cooking, they are always asking what we had for a “main dish.” Tonight I did not prepare what many people refer to as main dish, but when I do I call it a Blue Plate Special. My plate looks like the typical main dish with two sides, the main dish being tempeh or tofu. Other main dishes include such things as pasta, fajitas, burgers, etc.

But tonight our menu was a big salad with roasted vegetables and kiwi for dessert.

Salad: Romaine lettuce, lentils, yellow pepper, cucumber, green apple and toasted almonds with balsamic vinegar and olive oil

Roasted Vegetables: cauliflower, broccoli, onions

Fruit: kiwi
