Tonight I was a short order cook. I had all four burners going and got everything done about the same time.
By the end of the week, I have a little of this and a little of that in the refrigerator (half an onion, random halves of vegetables, beans, already cooked tempeh) so everyone gets to choose their meal. I feel good about not wasting anything and it’s a fun and creative way to cook everything that needs to be cooked!
For my son: pasta with olive oil, salt and pepper, green beans and green peppers
For my husband: cannellini beans, brown rice, onions, red, yellow and green peppers
For me: tempeh, onions, zucchini, spinach with cheesy creamy cashew sauce.
