I baked these cookies for my son’s first preschool Thanksgiving Day feast!
makes 84 cookies (7 dozen) using a 1 tablespoon ice cream scooper
2 cups all purpose flour
2 cups oats
1 cup vegan brown sugar
1/2 cup vegan cane sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla powder
1 teaspoon salt
1/4 teaspoon nutmeg
1 cup organic pumpkin puree
1/2 cup maple syrup
4 flax eggs (1 flax egg = 1 tablespoon ground flax + 3 tablespoons water)
1 cup mini vegan chocolate chips
Preheat oven to 350. Line baking sheets. Make the flax eggs.
Sift flour into a big mixing bowl. Add the oats, sugars, baking powder and soda, salt, vanilla powder, and nutmeg. Mix with a fork.
Add the pumpkin puree, maple syrup, and flax eggs. Add chocolate chips and mix very well.
Using a teaspoon ice cream scooper, scoop the cookies onto the sheet with a bit of room in between. Pat them down lightly with wet fingertips so the top is more flat-ish than round.
Bake for 15 minutes. Let cool. Enjoy!
