Chirashi-Zushi: Avocado, Cucumber & Scallion with Flying Carrot Roe

Chirashi-zushi is deconstructed sushi and is way easier than rolling sushi. I learned about it from my Japanese friend. It is called “housewife sushi” because it is easy and fast to make. I can relate.

1/2 cucumber
1/2 avocado
1/2 carrot
2 scallions
1 cup rice
1 tbsp brown rice vinegar
1 tbsp mirin
1/2 teaspoon vegan cane sugar
1/4 teaspoon salt

Make rice and then let it cool.  Mix in the vinegar, mirin, sugar and salt.

Dice the cucumber and avocado. Toss the carrots into the food processer and process finely. Thinly slice the scallion, using both the white and green parts.

Set the vegetables atop the rice. Sprinkle with carrots. Enjoy!
