Candle 79’s Cashew Cheese-Stuffed Yuca Cakes

Finally, a cassava root! Have you ever seen one of these? I never have.

My friend Anja and I have both been cooking the Candle 79 Cookbook. I have made 13 recipes so far; Anja is almost done! We have been waiting to make this recipe until we found a cassava root. Anja picked them up at her co-op and we are both making this recipe from page 18 today!

(Cashew cheese: 1 cup cashews, onions, leeks, 1/2 lemon, 1 1/2 teaspoon nooch)

The cookbook suggests either tarragon aioli or mint chimichurri sauce, but decided to go plain. They are absolutely delicious and surprisingly easy to make. Enjoy!
