Chickpea & Apple Salad

A lovely salad with scallions from my friend’s garden. I served this in combo with my Manhattan Chickpea Chowder.

Hearts of romaine
Green apple
Sunflower seeds
Toasted almonds

3 tablespoons olive oil
1 tablespoon white balsamic vinegar
The juice of 1/2 a lemon
S and P

Chop up the romaine and apples and slice the scallions. Toss with sunflower seeds and almonds.

Whisk the dressing ingredients and pour over salad. Toss well. Enjoy!
