I love making corn fritters so I thought a version would be great with all of the apples from the CSA. Chickpea flour is gluten-free and full of protein. These are a special Monday-is-a-holiday treat.
2 red apples (CSA Week #17)
2 flax eggs (1 flax egg = 1 tablespoon ground flax powder + 3 tablespoons water)
1/2 cup chickpea flour
3 tablespoons water, if necessary
Grapeseed oil, for cooking
Make the flax eggs. Cut the apples into matchsticks. Combine everything in a big mixing bowl.
Heat the oil in a non-stick skillet. Using a 3″ ice cream scooper, scoop out the fritters and cook until golden brown on the first side. Flip to second side and press down with a wooden spoon. Drain on paper towels. Serve warm. Enjoy!
