Billy’s Hot Potatoes

My friend Cindy has the cutest little garden in her backyard. She gave us this tiny little but VERY hot red pepper and her husband Billy’s hot potato recipe.

8 medium size Yukon gold potatoes
2 Walla Walla onions (CSA Week #11)
1 garlic clove
1 very hot little red pepper
Grapeseed oil
Salt

Chop up the potatoes and boil until just fork tender.

Slice up the onions and sauté in oil and a dash of salt. Mince the garlic and add to the onions. Cook until onions are translucent and garlic is fragrant, doing so on low heat so the garlic does not burn. Dice the pepper and add to onions and garlic.

Drain the potatoes and add to the pan. Raise the heat and cook the potatoes without stirring them around too much in order to brown the potatoes.
