Inspired by my friend Beto, I am in love with flautas (also called taquitos) which I make with potatoes. A totally delicious (and easy) appetizer/snack! I made 6 but only 5 made it onto the serving platter!
Flautas con Papas
6 corn tortillas
3 yukon gold potatoes (papas)
S and P
Sunflower oil
Peel and boil the potatoes and then mash them. Season with salt and pepper.
Steam the tortillas until soft. They have to be soft enough to roll without cracking. I use my bamboo steamer.
Place a spoonful of potatoes on one end of the tortilla. Roll up and place on a plate until all are rolled.
Heat up about 2″ of oil in a pan with sides. Carefully place the flautas seam side down and cook until crispy. Roll them over and crisp the other side.
Creamy Avocado Sauce
1/2 avocado
1/2 cup water
1 lime
A few sprigs of cilantro
Salt
Process all in processor until creamy, a few seconds.
Line up the flautas on a plate. Top with avocado sauce. Place the extra sauce on the side for dipping. Enjoy!
