I use my Crispy Chocolate Rice Treats as the base for these incredibly protein packed bars. Eat them for breakfast or as a treat for an afternoon pick me up!
1/2 cup oats
1/2 cup sliced almonds
1/4 cup chopped walnuts
1/4 cup chopped pecans
2 cups Barbara’s Brown Rice Crisps (Fruit Juice Sweetened)
2 scoops Sun Warrior Vegan Protein Powder
1/4 cup raw cacao powder
2 tablespoons maca powder
1 tablespoon chia seeds
1 teaspoon vanilla powder
1 teaspoon salt
3/4 cup brown rice syrup
1/4 cup maple syrup
1/2 cup almond butter or cashew butter
Toast oats and almonds, pecans, and walnuts in a 350 oven for 7 minutes. In a big mixing bowl, combine the oats, almonds, pecans, brown rice cereal, protein powder, chia seeds, cacao powder, maca powder, vanilla powder, and salt.
In a small pot, heat up brown rice syrup, maple syrup, and almond butter until it is all melty and bubbly.
Pour the liquid mixture over the dry mixture and combine.
Pour into a 9″x 9″pan and press down well. Refrigerate until hard. Cut into squares and wrap individually in plastic wrap. Store in the refrigerator. Enjoy!
