Vegan Caesar Salad

My perfected Caesar dressing.

Vegan Caesar Dressing (makes about 1 cup)
3 tablespoons Veganaise
1 tablespoon dijon mustard
1/2 cup olive oil
1 tablespoon lemon juice
2 teaspoons nutritional yeast (nooch)
1 teaspoon chickpea miso
1/2 teaspoon garlic powder

Whisk the dressing ingredients together.  Refrigerate until ready to use.  It will be thick.  When you are ready to use the dressing, portion out what you need and add a few drops of water and mix until you get a good consistency.

Caesar Salad (serves 4)
3 romaine hearts

Mix the dressing as described above in the bottom of a big mixing bowl.  Chop the lettuce.  Drop into the bowl and mix well.  Serve and enjoy!
