Ice cream sandwiches are one of my all time favorites.
Step #1: Make ice cream. I took out the peanut butter from my Ice Cream Shmice Cream #4: Double Chocolate Peanut Butter to make a perfect chocolate ice cream.
Step #2: Make Chocolate Chip Cookies.
Step #3: Make ice cream sandwiches.
Chocolate Ice Cream
2 cans coconut milk
1/2 cup raw cacao powder
1 tablespoon vanilla extract
3/4 cup vegan cane sugar
Whisk the milk, cocoa powder, vanilla and sugar together. Place covered in the refrigerator for at least 2 hours.
Pour the mixture into the ice cream maker. Churn for 15 minutes.
Place it into a freezer safe container and let it hang out for at least 4 hours (better overnight).
Take ice cream out of the freezer and let it soften for a few minutes. Scoop and place on the bottom of one cookie. Top with another cookie, bottom side on the ice cream. Enjoy immediately!
