Perfectly ripe peaches baked with a crispy top!
4 ripe peaches
1 tablespoon of fresh lemon juice (approximately half a lemon)
1 tablespoon whole wheat pastry flour
1 cup oats
1/2 cup whole wheat pastry flour
1/4 cup vegan brown sugar
1/4 cup grapeseed oil
2 tablespoons maple syrup
1/2 teaspoon vanilla powder
1/2 teaspoon salt
Preheat oven to 375.
Slice the peaches in half, remove the pit and slice each half into four pieces. Mix with brown sugar, lemon juice, and flour. Pour into a baking dish.
In a separate bowl, combine crumble ingredients. Pour the topping over the peaches and bake for about 30 minutes or until the top is crispy.
Scoop up peaches and lots of topping. Enjoy!
