A lovely summer sandwich with squash from the farmer’s market.
makes 2 sandwiches
4 pieces of bread (really great sourdough or whatever you like)
4 pieces red leaf lettuce (from CSA Week #3)
4 little summer squash
2 tablespoons veganaise
2 teaspoons chives
The juice of 1/2 of a lime
1/4 teaspoon garlic powder
1/4 teaspoon paprika

Steam the summer squash. Slice the avocado and cucumber and tear up the lettuce. Grate the carrots.
Mix the ingredients for the aioli and adjust seasonings.
Toast the bread. Spread the aioli on each side and build the sandwich with the lettuce, cucumber, carrots, squash and avocado. Top with the other toast. Cut in half. Enjoy!
