Warm Lentil Vegetable Salad with Bright Lights Swiss Chard

I really do think bright lights swiss chard (from CSA Week #3 (items marked with an *)) is beautiful and it makes this dish very colorful!

(makes enough for a mom and a 3 year old for lunch or 3 to 4 servings as a side dish)

1 cup cooked French lentils
6 pieces of bright lights swiss chard*
1 big shallot
1 carrot
1 zephyr squash*
Olive oil
1 tablespoon fresh lemon juice (approximately 1/2 a lemon)

Cook the French lentils ahead of time.

Remove the center stem from the leaves of the swiss chard.  Roughly chop the leaves (set aside) and dice the stems.  Slice the shallot thinly and dice the carrot and squash.

Heat up olive oil and sautée the vegetables and chard stems until soft. Add the chard leaves and wilt.  Add the lentils and mix well.  Squeeze the fresh lemon juice over the top.  Enjoy!
