After my lovely escarole and white bean soup for lunch, I needed to take a break from all things green and make myself a snack.
I made this exactly the same way my father used to make us grilled cheese when we were little.
2 pieces of really great bread
3 slices of Daiya Cheddar Style Wedge
Heat up Earth Balance in a non-stick skillet. Make a sandwich and place in the skillet. Toast the first side. Add more Earth Balance to the skillet and flip the sandwich over. Toast the other side. Cut in on the diagonal. Enjoy!
