Tempeh taco night. Easy prep and fun for everyone!
Taco Seasoning for Tempeh
1 8 oz package tempeh (I used Lightlife tempeh)
1 small onion
1 teaspoon each chili powder, garlic powder, paprika, and cumin
1 tablespoon tamari
1 cup water
1/4 cup tomato paste
For the Tacos
8 taco shells
Daiya Cheddar Style Shreds
Dice up onion. Sauté in grapeseed oil until soft. Crumble tempeh and add to the onions. Add the taco seasoning and toss to combine. Add water and tomato paste and cook together until water is absorbed.
Prepare the other taco fillings.
Serve taco fillings on individual plates so everyone can assemble their taco. Enjoy!
