CSA Week #2: Salad and dressing (items marked with an *). A no cook meal on a hot summer night.
Fresh Summer Salad
1 head of red leaf lettuce*
1 head of geen leaf lettuce*
1/2 bunch summer spinach*
1 garlic scape*
1/2 cup red grapes
1/2 cucumber
1/4 cup pistachios
1/2 cup blueberries
Clean and chop the lettuces and spinach.
Very thinly slice the garlic scape. Cut the grapes in half. De-seed and dice the cucumber. Coarsely chop the pistachios.
Strawberry Balsamic Vinaigrette (makes 1 cup)
1 pint strawberries
6 tablespoons olive oil
3 tablespoon balsamic vinegar
1 tablespoon lemon juice (approximately 1/2 lemon)
1 teaspoon agave
1/2 teaspoon pink salt
Coarsely chop the strawberries. Add all ingredients to the food processor and process. Mix the lettuce with the dressing and then top with the rest of the ingredients. Drizzle more dressing on top. Enjoy!
