Chinese cabbage (from CSA Week #2) goes perfectly with peanut dressing. My friend Allison gave me this recipe a long time ago and we love it on noodles too!
1/2 cup peanut butter (room temperature)
1/2 cup rice wine vinegar
1/4 tablespoons tamari
1 tablespoon tahini
2 tablespoons sesame oil
2 teaspoons water
Ginger powder, to taste
Garlic powder, to taste
Whisk ingredients together. Taste and adjust the flavors.
Chinese Cabbage Salad
1 head Chinese cabbage
1 red pepper
Shred the cabbage. Slice the red pepper into matchsticks. Grate the carrot. And thinly slice the scallions. Save some for garnishing each portion.
Mix salad and toss with dressing. Serve topped wtih extra scallions. Enjoy!
