Garlic Scape Pesto over Quinoa Spaghetti

CSA Week #1: I have been looking forward to getting my hands on garlic scapes every since I joined the Stoneledge Farm CSA.  This is my basic basil pesto recipe adjusted for garlic scapes.

I made the pesto last night so the flavor had a little time to mellow.  These measurements make a cup of pesto.

10 garlic scapes
1/4 cup pine nuts
1/4 cup olive oil
1 tablespoon lemon juice (about 1/2 a lemon)
1/4 teaspoon Marmite or 1 tablespoon nutritional yeast
1/4 teaspoon salt

Chop up the garlic scapes and place in the food processor.  Add pine nuts, olive oil, lemon juice, marmite and salt.  Process.  Refrigerate until ready to use.

Boil up the pasta and toss with the pesto.  Cut up a few tomatoes for garnish.  Enjoy!
