I found this dry mix in the Complete Idiot’s Guide to Vegan Cooking (on page 109) by one of my most favorite vegan chefs Beverly Lynn Bennet. All you need to do is process the ingredients and store in the refrigerator to use later on such things as Instant Mac ‘n Cheese, over vegetables, on top of baked potatoes, etc.
Cheese Sauce Dry Mix
1/2 cup cashews
1/4 cup rolled oats
2 tbsp sunflower seeds
1/2 cup nutritional yeast
1 tbsp arrowroot
1 teaspoon each: dry mustard, garlic powder, onion powder, salt
1/2 teaspoon paprika
Process all ingredients. Refrigerate in an airtight container until ready to use.
Instant Cheese Sauce
1/2 cup Cheese Sauce Dry Mix
1 cup soy milk
Heat over medium in a small pot and cook until thickened, stirring often.
Can you use Almond Milk instead of the soy?
hi patricia! this is not my original recipe but i would think so. why not? it takes just a few minutes for the mixture to come together and get creamy so the almond milk should be fine. let me know!
