Chocolate Cupcakes with Chocolate Peanut Butter Frosting


Chocolate + peanut butter = heaven.

This frosting is inspired by two amazing doctors, Dr. Matt Lederman and Dr. Alona Pulde, who wrote Keep it Simple, Keep it Whole: Your Guide to Optimum Health and are featured in the film Forks Over Knives.

The recipe index has lots of great ideas but for a book that is all about health, to find a recipe for frosting*, made me (a) happy and (b) proves that you can enjoy breakfast, lunch, dinner and dessert and be super healthy!

The Vegan Chocolate Cake Formula
1 dozen cupcakes

Chocolate Peanut Butter Frosting
1/2 cup peanut butter (natural, nothing added)
1/4 cup hot water
1/4 cup maple syrup
2 tablespoons cocoa powder
1/2 teaspoon vanilla powder

Whisk the peanut butter, hot water and maple syrup together.  Sift the cocoa powder over the mixture and add the vanilla powder.  Whisk to combine well.

Wait for the cupcakes to cool completely and then frost.  Eat and enjoy!

* The original recipe was just peanut butter, water, and maple syrup.  I added the cocoa and vanilla powders.
