I love making this salad with black and white sesame seeds for lunch or an afternoon snack. I made this recipe, which serves 8 people, for friends. It is perfect for a party or summer pot luck.
Dressing
1/4 cup peanut butter
1/4 cup tahini
2 tbsp tamari
2 tbsp sesame oil
2 tbsp rice vinegar
2 tbsp agave
1/4 cup hot water
Salad
1lb spaghetti *
2 carrots
1 cup red cabbage
1 cup white cabbage
2 scallions
1tablespoon each toasted black and white sesame seeds
Make the pasta. Drain and run under cold water when done and set aside in a big mixing bowl.
*Don’t use gluten-free pasta if you want to make this ahead of time.
Whisk together all of the ingredients for the dressing. Toast the sesame seeds.
Using a vegetable peeler, peel the carrots into long, thin pieces until there is no more carrot left. Shred the red and white cabbage, and slice the scallions on the bias.
Add the vegetables and sesame seeds to the spaghetti. Pour the dressing over the top and mix well.
Eat immediately or refrigerate until ready. Enjoy!
