Apple-Cabbage-Carrot Slaw

A delicious salad.

makes enough for 4 people

1 Gala apple
1 cup red cabbage
1 cup white cabbage
1 big carrot

1 tablespoon fresh chopped parsley
3 tablespoons olive oil
3 tablespoons Veganaise
1 tablespoon freshly squeezed lemon juice (approximately 1/2 lemon)
1 teaspoon Dijon mustard
1 teaspoon red wine vinegar
1 teaspoon agave
S and P

Chop the apple into bite sized pieces.  Shred the cabbage and carrot.  Mix in a big bowl.

Chop the parsley and place in a small mixing bowl.  Add olive oil, Veganaise, fresh lemon juice, mustard, vinegar, agave, salt and pepper.  Whisk together.  Taste and adjust, if necessary.

Pour the dressing over the apple, cabbage and carrots.  Mix well.  Eat right away or let sit for a while.  It just gets better.  Enjoy!
