Almost Traditional Irish Soda Bread

Happy St. Patrick’s Day!  I saw a sign for an Irish Soda Bread contest at the Y where Luke swims and decided to make my own!  I based my recipe on the Traditional Irish Soda recipe from The Society for the Preservation of Irish Soda Bread but added raisins, which is the untraditional part.  I didn’t enter the contest but I made several versions and this one is the winner in our house!

2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup vegan buttermilk (1 cup soy milk + 1 tablespoon white vinegar)
1/2 cup raisins

Preheat oven to 375 and move a rack into the middle.  Line a baking sheet with parchment paper.  Combine the soy milk and vinegar.  Set aside.

Sift the flour into a big mixing bowl.  Add the baking soda and salt.  Add the vegan buttermilk and mix to combine.

The dough is sticky but comes together easily.  Knead just a few times.  Form it into a ball and place it onto the baking sheet.  Cut a cross into the top of the dough. Bake for 40 minutes.  Enjoy!
