Coconut Dreams

These are my delicious, light, coconut-y cookies.  They are oil free and can be made gluten-free too!

makes 16 cookies

1/2 cup all purpose flour *
1/2 cup packed vegan brown sugar
1/4 cup vegan cane sugar
1/2 cup shredded coconut
1/4 teaspoon vanilla powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup oil
2 flax eggs (1 flax egg = 1 tablespoon ground flax powder + 3 tablespoons water)

Preheat the oven to 350.  Make the flax eggs and set aside.  Line 2 baking sheets with parchment paper.

In a big mixing bowl, sift the flour.  Add the brown sugar, white sugar, shredded coconut, vanilla powder, baking powder and salt.  Mix well with a fork.

Add the oil and flax eggs and mix until dough forms.

Using a tablespoon measure, drop cookies onto baking sheets.  Pat the top down gently.  Bake for 20 minutes.  Enjoy!

*Use coconut flour for a gluten-free version!
