I had leftover “queso” from our Super Bowl nachos and poured it over our pasta for lunch today. It is totally versatile and makes a great cheezy type sauce for pasta. A great when-I-have-nothing-else-to-make-for-lunch lunch.
Queso
1/2 red onion
1 clove of garlic
1/2 cup cashews, soaked overnight
The juice of one lemon
1/4 cup water
1 tablespoon tahini
1 roasted red pepper
1/2 teaspoon dijon mustard
1/4 cup nutritional yeast
1/2 teaspoon paprika
2 teaspoons salt
Chop and saute the onion in olive oil. When it starts getting soft, chop the garlic and add it in. Add all of the ingredients to the food processor and process until well combined.
Boil up brown rice pasta. Drain and pour on the queso. Mix well and enjoy!
