My friend Anja, who writes on her blog One Bite Rule, made this soup recently and said I have to make it. We are both cooking the Candle 79 book (she is way ahead of me.)
I’ve never cooked Jerusalem artichokes before, but Anja was right, this soup was terrific, creamy and really flavorful. The book calls for crispy sage as garnish but I roasted some slices of the Jerusalem artichoke instead. Find the recipe on page 33. Delicious!
