Our friend and student Cindy at Project: Yoga brought us a box of delicious homemade chocolates. She has been making them forever, it is her mother’s recipe, but she made them vegan for us. They taste the same, better because they are cruelty free (!), so I think maybe she will keep them vegan!! Here is the recipe:
12 oz bag Divvies semi sweet morsels vegan chocolate
1 bag Dandies vegan marshmallows
Organic cranberries (or raisins)
Organic cashews (or peanuts)
Melt chocolate in a double boiler until melted. Add about 1/2 cup of nuts and 1/2 cup fruit. Mix.
Place approximately 20 marshmallows on cookie sheet covered with wax paper. Drop about a teaspoon (or a tablespoon for larger cluster) of chocolate mixture over each marshmallow to cover and form a cluster. While chocolate is wet sprinkle either chopped nuts, sprinkles, or place a small piece of marshmallow on top.
Place in freezer (flat) so clusters can cool for approximately 15 minutes. Remove from wax paper and enjoy!
