We are getting ready for Chanukah over here. These are my amazing sweet potato latkes.
2 large sweet potatoes
1 onion
1 flax egg*
2 tablespoons brown rice or chickpea flour
Pinch of salt
Sunflower Oil
Optional toppings: vegan sour cream or homemade applesauce
*1 flax egg = 1 tablespoon ground flax + 3 tablespoons of water
(makes about baker’s dozen using a 2 tablespoon ice cream scooper)
Whip up the flax egg. Set aside.
Peel the sweet potatoes and grate them using a box grater. Place them in a dish towel and ring out as much of the water as possible.
Cut the onion into chunks and toss it into the food processor to chop it. Mix the onions into the sweet potatoes, add the flax egg, flour and salt.
In a non-stick skillet, heat up high heat oil like sunflower oil. Using an ice cream scooper, drop the latkes onto the hot oil. Press down gently with a spatula and cook until the first side is nicely done. Flip over and cook well on the other side. Drain on a paper towel.
Serve topped with vegan sour cream, applesauce, or all by themselves. Enjoy!
