Luke’s Broken Lasagna with Roasted Tomato Sauce Topped with Candle 79’s Cashew Parmesan

Luke helped me make lunch today.  He wanted “pastas” so he pulled out a box of lasagna and helped me by breaking up the sheets.  We made the sauce lickity split and added this amazing Cashew Parmesan from the Candle 79 cookbook which is now a staple in our kitchen.

Roasted Tomato Sauce
1 pint grape tomatoes
1 small red onion
Olive oil
Salt
1/2 cup water

1 box brown rice lasagna

Preheat oven to 350.  Toss the tomatoes in olive oil and salt and place on a baking sheet.  Roast for about 25 minutes.

Get the noodles going.

Cut up the onion and saute in olive oil until soft.  When the tomatoes are done, add to to the pan with the onions, break them up by stirring them around.  Add the whole thing to the blender along with a good pinch of salt.  Process until smooth.

Pour the sauce over the noodles and top with the Cashew Parmesan.  Enjoy!

  1. i understand why i would look/sound/seem funny to you that I would use a 2 year old’s recipe but this is no joke. i could have sworn it was perfectly salted and the cashew parm was really the cherry on top
