Easy Tofu Dinner: Grilled Tofu with Vegetable Ribbons over Rice

This is the easiest meal I make, a blue plate special that is fast, easy, and clean. I use salt, pepper and olive oil to season everything and it takes almost no time to cook.  The key is to use really good olive oil.

1 package extra firm tofu
1 onion
1 carrot
1 zucchini
1 cup rice
Olive oil
S and P

Press the tofu. Get the rice going.

Slice the onion in half and then into semi circles. Sautรฉ in olive oil and salt and pepper.

Peel the outer layer of the carrot. Then continue to use the peeler to get nice strips of carrots. Add into the pan with the onions.

Use the peeler on the zucchini but use the skin. Just peel down to the seeds and then turn the zucchini and continue to peel. Add into the pan with the onions and carrots and season with salt and pepper.

Cut the tofu into small triangles. Pour olive oil into a bowl, add salt and pepper, and whisk together.  Bring a grill pan up to high heat. (Make sure it is hot.) Brush one side of the tofu with the marinade and place that side down on the grill pan. When the first side is done, brush the top of the tofu triangles and then turn them over.

Plate it up and enjoy!
