Broccoli Walnut Pesto Caserecce

I love making pestos for lunch with Luke.  Drop everything into the food processor and go.  It’s fun to get creative and use different vegetables.  When I have leftover steamed broccoli from dinner, this is what I make. Walnuts are the star because they are full of Omega 3 fatty acids.

1/4 cup walnut oil
1/4 cup walnuts
1 cup steamed broccoli
2 teaspoons tomato paste
2 teaspoons water
Pinch salt
Brown rice pasta (today I used Jovial brand Caserecce)

Get the pasta going.  Steam the broccoli to just tender (or use leftover.)   

Place everything in the processor and process.  (Add more water if it is too thick.)

Combine with the pasta and eat!
