Carrot Soup

My husband requested carrot soup.  Done and done.

12 carrots
1 onion or 1 leek
2 cloves of garlic
2 cups vegetable broth
1 cup water
1/2 to 1 teaspoon curry powder, to taste
Olive oil
makes 3 to 4 servings

Cut the onion up into big chunks and place into a soup pot with olive oil and salt to sweat them.  Peel and cut the carrots up into chunks and when the onions are translucent, add them along with some salt. Add the vegetable broth and water.  Bring to a boil and then let simmer until the carrots are soft.

Using an immersion blender, puree the soup.  Turn the heat off and let the soup sit for a while.  Heat when ready.  Enjoy!
