Cannelini Beans with Roasted Fingerling Potatoes, Wax Beans & Broccoli over Sautéed Spinach

This is a great one bowl meal filled with everything delicious and it is very easy to put together.  These measurements make enough for the three of us (one being a 2 year old) so adjust accordingly!

1 cup cannelini beans, soaked overnight and cooked
1 dozen fingerling potatoes
1 small head of broccoli
1 big bunch of wax beans
1 box of baby spinach
Olive oil
S and P

Preheat the oven to 375.  Slice the potatoes in half and coat with olive oil, salt and pepper.  Lay them cut side down on the baking sheet and roast for about 25 minutes.

In the meantime, clean and prepare the wax beans and broccoli.  Steam them separately.  When done, drain and place in a pan with sides, season with salt and pepper, and cover to keep warm. Add the beans to get them warm too.

Drain the beans.  In a separate pan, saute the spinach in olive oil and salt.  This takes less than a minute.

Plate it all up in one big bowl and enjoy!
