Little Chocolate Fudge Cups with Marshmallows on Top

An easy dessert that is cute and delicious!

1 cup of vegan chocolate chips
3/8 cup natural (nothing added) peanut butter, room temperature
3 tablespoons vegan powdered sugar, sifted
1/2 package Sweet & Sara mini vanilla vegan marshmallows
12 mini cupcake cups

Sift the powdered sugar into a bowl.  Mix the peanut butter in.

Melt the chocolate chips.  Take the pot off the flame, add the peanut butter mixture and melt it all together. 

With the liners on a baking sheet, drop a heaping teaspoon of the chocolate peanut butter mixture into each cup so that it fills it up almost all the way.  Bang the tray on the counter a few times to even them out.  Top with 3 or 4 marshmallows.  Refrigerate for at least 15 minutes.  Enjoy!
