Chickpea Salad Sandwich

Lunch is always an elaborate, two pot/pan minimum affair, so this summer I have been experimenting with sandwiches.  Every week we have been going to the beach (Sunny Atlantic) with the grandparents which calls for a picnic lunch.  Hence, the perfect sandwich!

2 cups chickpeas, soaked overnight and cooked
1 carrot
1/2 small red onion, finely diced
3 teaspoons relish
Veganaise, start with a tablespoon
Juice of 1/2 lemon or more
S and P

In the bowl of the food processor, add the chickpeas and pulse a few times. Empty into a big mixing bowl.  Process the carrot and add to chickpeas. Dice up the onion very small and add it in. Next, add in the relish and veganaise; start with a tablespoon and add more if necessary, to your taste. Then squeeze in the juice of half a lemon. Season with salt and pepper. Taste and adjust. Let it sit overnight so all the flavors really have time to meld.

Toast up some great bread and pile it high with salad.  Enjoy!
