Quinoa Fusilli with Fresh Creamy Tomato Sauce

My son and I eat lots of pasta for lunch.  It is just an easy way to get nutrients into him.  It is the simple addition of fresh tomatoes to my basic cashew cream sauce that has my son saying, “pasta la pasta!”

2 cups of quinoa fusilli
1/4 cup raw cashews
1/4 cup grape tomatoes + a few extra for garnish
1/4 cup olive oil
1/4 cup water

Boil the pasta.Process the cashews in the food processor until fine. Then add the tomatoes, olive oil, water and salt.  Process. That’s it!

Drain the pasta and pour the sauce over the fusilli to coat evenly. Top with a few halved tomatoes. Enjoy!
