Lisa’s Greek Spinach & Rice

I love Greek food. Here is my version of spinach and rice (called spanakorizo.)

1 onion, diced
1 cup rice
1 cup tomato sauce
1 cup vegetable broth
1 cup water
1 cup frozen chopped spinach, thawed and well drained
2 lemons
Dill (fresh or dried)

Sauté the onion in olive oil and salt. When translucent, add the rice and stir it around to coat all of the grains. Add the tomato sauce, broth, and water and stir it all together. Add in the spinach and dill and more salt. Bring to a boil and then reduce to a simmer. Cook until the liquid is absorbed and the rice is cooked. Squeeze the juice of one lemon in and stir around before you take it out of the pot. Then serve with lemon wedges for extra lemon-y goodness!
