Bubbles & Squeak: The OC + Mashed Potatoes

Tonight our British friend Lila was over and I wanted to make her feel right at home.  So I made my version of “bubbles & squeak” which is a sort of concoction of Sunday dinner leftovers made around England.  Mine is not leftover nor it is particularly squeaky, but it is delicious! 

2 russet potatoes
1 large onion
1 small head of napa cabbage
Olive oil
Soy milk
S and P

Roughly chop the potatoes and boil. 

Cut the onions and cabbage into semi circles.  Starting with the onions, saute in olive oil until just translucent and then add in the cabbage.   This is the OC. 

When the potatoes are done, drain them, mash them and mix in a few tablespoons of olive oil, soy milk, and salt and pepper.  This is the mashed potatoes. 

Mix the OC in with the mashed potatoes and then add back into the saute pan and cook the whole thing together.  This is the bubbles and squeak!

Serve as a side dish.  Enjoy!
