Tempeh Burger

Very filling, delicious, all-in-one burger.

2 potatoes
2 carrots
1 onion
1 package tempeh
2 tablespoons tamari
1/2 cup of chickpea flour
6 Ezekial 4:9 Sprouted Grain English muffins
1 perfectly ripe avocado
S and P
Earth Balance
Veganaise, Ketchup and/or Mustard

Cut up the potatoes and boil them.

Process carrots and onions in a food processor.  In a skillet, heat up some safflower oil and saute the vegetables with salt and pepper for 5 minutes or so.

Grate the tempeh with a box grater and add it to the vegetables.  Add 2 tablespoons of tamari to the mixture.  Cook it well so the tempeh has time to absorb some of the flavor of the vegetables.  When nicely cooked together, place in a mixing bowl and set aside.

When the potatoes are done, drain them, mash them and add to the vegetables.  Add in the chickpea flour and combine well.

Make patties. This mixture should yield about 6 nice size burgers. Heat oil in a nonstick skillet and brown the burgers on both sides.

Toast the Ezekial muffins and spread with Earth Balance.  When the burgers are done, assemble and place freshly sliced avocado on top.  Add veganaise, ketchup, or mustard to make this an even better burger.  Eat immediately!
