White Gazpacho

I saw Claire Robinson make this on the Food Network.  It’s vegan!  All I did was swap out the soy milk for almond milk.  It is refreshing and easy!  These measurements make three really nice size bowls.

1 cup almond milk
1/2 cup raw slivered almonds
2 1/2 cups seedless white grapes, plus more for garnish
2 scallions, 1 1/2 for the puree and 1/2 for garnish
1 lime, juiced

Place the almond milk and almonds in the blender and puree until smooth.  Add the grapes, scallions, lime juice, and salt.  Continue to puree until smooth.

Let it chill for a few hours before serving so the flavors can come together.  Mix well before pouring equal amounts into three bowls.  Garnish with sliced grapes and scallions.  Enjoy!
