Martha’s Kale & Peanut Salad

As a former non-lover of kale, I am very impressed with this salad.  My friend Martha sent me the recipe and I have to say, it is delicious!  It is so easy and if you are on the fence at all in terms of kale, this will convert you!

1 small bunch of lacinato kale
1/4 cup salted peanuts

Dressing
1/4 cup peanut oil
2 tablespoons cider vinegar
1 tablespoon maple syrup
1/4 teaspoon coarse sea salt

Take the center ribs out of the kale (it is easy to just rip the kale off the rib) and slice it.

Blend all of the ingredients for the dressing together (I used a whisk, Martha uses an old jam jar.).  Either way make sure it is well blended.

Toss the kale into the dressing and add the peanuts.  Let it sit for a good couple of hours so the kale can soften.  Martha says if it doesn’t soften, it needs more dressing, and that it is even better the next day.
