I am a vegan who is not in love with kale! I know, how can it be?? I am getting into it now. My friend Karen taught me how to make these kale chips and I have to say I like them. They are easy and I can play around with the flavoring (e.g., adding cayenne pepper!)
1 bunch of lacinato kale
1 tablespoon olive oil
S and P
Preheat oven to 350.
Cut the center rib out of the kale and tear into chip size pieces. In a mixing bowl, pour the olive oil and seasonings, add the kale and mix to cover the kale leaves.
Place on a baking sheet lined with parchment paper and bake for 20 minutes or until nice and crispy! They are surprisingly good!

just made these and I had to force myself to walk away from the kale chips before I ate the entire lot. SO delicious and so easy! Definitely will be in regular rotation now.
