Crispy Chocolate Rice Treats

I love Alicia Silverstone’s book “The Kind Life.”  So many great recipes.  I adapted her recipe for rice treats.  I melt the chocolate into the mix so that I don’t have to add them later.  It gets really sticky and I think this way is easier.  Plus, it tastes great! 

1 box of brown rice cereal
1 jar (1 lb 5oz.) of brown rice syrup
3/4 cup peanut butter
1/2 cup chocolate chips
1/4 tsp salt

Pour the cereal into a big mixing bowl.

Over low heat, heat the brown rice syrup with the salt until it liquifies.  Add the peanut butter and chocolate chips and let them melt in.  Pour over the cereal and mix with a wooden spoon.  It gets sticky fast so work it!  Turn the mixture out into a baking dish (mine is 9×9) and press it down with the spoon.  Let it cool.

Cut into squares and enjoy!
