Spinach & Chickpeas

What to do with chickpeas and spinach? 

1 onion, thinly sliced the long way
1 lemon, freshly squeezed
1 box of baby spinach
1 cup chickpeas (soaked overnight, cooked)
1 cup rice
Salt
Dill

Cook the rice.

Sauté the onion in olive oil. When it is translucent, add the fresh lemon juice. Add the spinach, with a dash of salt and lots of dill, and let the spinach wilt. Add in the chickpeas and heat them through.
Serve over rice. Enjoy!
