An easy and healthy pasta dish that is light, colorful, and delicious!
Cashew Cream Sauce
1/4 cup raw cashews
1/4 cup extra virgin olive oil
1/4 cup water
dash salt
1/2 tsp fresh lemon juice
Purple & Green Pasta
1/2 purple onion, diced
1/2 white onion, diced
1 zucchini, diced
1/2 cup frozen peas
Salt
1 box quinoa spaghetti
Boil up the pasta.
Saute the onions in olive oil and a little salt. When they are translucent add the zucchini.
In the meantime, place the cashews into the blender and process them until fine. Then add oil, water, salt, and lemon juice and process. If you don’t have a lemon that is fine. It will still taste good.
Add the peas into the saute pan with the other veggies. They will defrost in seconds. Add the sauce right into the pan.
Drain the pasta and add it to the pan too, tossing the pasta around to cover it with the sauce and veggies. Serve hot!
