It is what is says…any day of the week, rice and beans plus vegetables. It makes a great, fast, healthy dinner and it is a staple in our house. I always have beans that I have soaked and precooked. They are either ready to go in the refrigerator or stored in the right servign size for us in the freezer. I always have rice and of course, a fresh assortment of vegetables.
Rice (white, brown, wild, pink, Forbidden)
Beans (cannellini, kidney, chickpea, navy, pinto, black)
Vegetables (onions, scallions, garlic, zucchini, carrots, broccoli, colorful peppers, corn (fresh, frozen or canned,) Brussels sprouts)
S and P, to taste
Oil, optional for sautéing
Olive oil, optional to finish
Boil up rice.
Prep and sauté vegetables in oil or water.
Add beans and bring up to heat
Serve over rice. Enjoy!
