After a great yoga class this afternoon with our dear teacher Rima, I got home and made quick and easy tofu fried rice for us.
1/2 cup Texmati rice
1/2 box of extra firm tofu
1 small onion
1/2 yellow pepper
1/2 carrot
1/2 cup pea pods
2 tablespoons sesame seeds
Sesame Oil
Tumeric
Tamari
Toasted Sesame Oil
Press the tofu and make the rice.
Chop and sautรฉ the onion in sesame oil until translucent. (Don’t add any salt because you will get it from the tamari.) Shred the carrots in the processor and them to the onions. Dice the yellow peppers and add them to the mix. Slice the pea pods in half and add them in. Top with sesame seeds. Mix well and let cook on a low flame.
Heat up sesame oil in a small skillet and crumble the tofu into the oil. Season with enough tumeric so the tofu turns yellow and heat through. Pour the tofu into the vegetables, add the rice and mix it all together.
To flavor the rice, add tamari and a dash of toasted sesame oil (a lot goes along way.) Taste and keep adjusting the flavors until just right. Enjoy!
p.s.: makes great leftovers; just reheat in a skillet.
