Mexican Mash-Up

This is another really easy family dish…I make it all the time.  It is colorful, fresh and delicious!  Serve it with fresh avocados or guacamole!

Mash-Up
1 large sweet potato
1/2 zucchini
1/2 red pepper
1/2 cup of fresh or frozen corn, roasted
1/4 cup red onion
2 scallions
1 cup black beans (soaked overnight and cooked or a can)
Fresh cilantro (as much as you want)
S and P
Lemon juice (as much as you want)
Cayenne
Cumin
Chili powder
Flour tortillas

Bake the sweet potato. If using frozen corn, let it thaw.   If using fresh corn, cut it off the cob.  Either way, place it on a baking sheet and mix with a little olive oil and salt.  Roast it for a few minutes.  In the meantime, dice up the zucchini, red pepper, red onion, and scallions.  Try to make them all about the same size.

When the sweet potato is done, peel the skin and then mash it up.  Mix in all of the vegetables and corn.  Season it with salt, pepper, dash of cayenne, dash of chili powder, and dash of cumin.  Add lemon juice to bring the flavors together.   Add as much cilantro as you like or leave it out.  Taste it – adjust as necessary. 

Serve with flour tortillas (to make burritos) heated up on the gas stove top or in the oven.  Enjoy!
